You can use white beans to make white sauces.  Experiment with the amounts to find the texture you like.  When I make white sauces I like to blend the flour and water really well before adding it to heated oil.  I like the savory flavor of olive oil.  Using beans makes it a higher protein sauce, lower carbohydrate.

White Bean Sauce
Basic recipe:

1 C cooked white beans
1 C fluid (Water, stock, etc)
Salt to taste

You can add garlic, or curry, whatever you like to taste.  If you add more water and about a 1/2 cup parmesan cheese, it's super yummy.

This works well on spagetti, fetuccine, egg noodles, and or rice.
