Eggs

Flax egg replacer:

Combine one tablespoon of flax-seed meal and three tablespoons of water and allow to sit for about 5 minutes. Add this ingredient to your recipe as you would an egg.

*This is a good option for baked goods, but don't experiment with this when you're having company or something, it's not good in every recipe, so try it now and then in different ones and make note which ones do well with it. 

 

Waterglassing-(Egg preserving):

One ounce BY WEIGHT of hydrated lime (caustic lime, builder's lime, slaked lime, cal, and pickling lime are all names of this kind of lime) per QUART of water.

For instance: one gallon of water would require 4 WEIGHED ounces of lime because there are four quarts in a gallon.

Stir until the lime is fully dissolved in the water, ad whole eggs.  you do not want pasteurized eggs from the store. You do not want to wash the eggs, as that will remove the coating that makes them able to be preserved.  You also do not want dirty eggs.  So get them from a clean source or if you raise them yourself keep your laying boxes clean so you can harvest good eggs for preserving.

Freezedried Eggs:

Eggs can be freeze dried by breaking them into a bowl, setting aside the shells for compost or garbage, pouring them into a shallow sheet, freeze them, freeze-dry them according to your freeze-dryers instructions.  You should be able to powder them and store them in airtight mylar bags, mason-type jars, or cans. These can be used to make scrambled eggs or in baked goods, etc.

You can buy freeze-dried eggs also, but there is a HUGE difference between dehydrated and freeze-dried eggs.  Dehydrated eggs can be used in baked goods, but NOT as scrambled eggs. Additionally, you typically keep more nutrients with freeze-drying than dehydration.  That said, SOME is better than NONE. If your budget only allows for dehydrated, that is better than not having any at all. I do prefer dehydrated eggs to the flax substitute for my baked goods.  Store what you have access to.
